Directions:

1. Lets prepare the quinoa for cooking.
In a sized saucepan on the stove burner, over medium heat setting up two cups of water to boil first before adding the cleaned quinoa grains into it; then adjust the heat level to low once the water reaches a boiling state and cover with a lid for approximately 15 minutes until all the liquid has been absorbed and the quinoa has fluffed up nicely before letting it sit aside for later use.

2. Lets prepare the vegetables for roasting.
Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Place the butternut squash and beets on a baking sheet and coat them with olive oil as well as a sprinkle salt and pepper mixture, on top before baking in the oven for about 25 to 30 minutes or until they are tender and have a nice golden color on them.
